Muffin Tin Meatloaves


 
I made these on Saturday when I had family over for dinner. They were a huge hit!

For 24 muffin sized servings:

1 lb ground beef
2 lbs ground venison or turkey

1 chopped bell pepper
1 c chopped onion
1 c chopped mushrooms

1 tbsp Worcestershire sauce
1 c ketchup
1/4 c mustard
2 tbsp vinegar
1/4 c brown sugar
3 eggs
4-6 slices of 35 calorie bread, white or wheat, made into crumbs in a food processor

Mix together all ingredients with hands until well mixed.
Evenly distribute into 24 servings.
Form into balls.
Place in muffin tins.

Bake at 350 for 30-45 mins until cooked through.

About 120 calories per meatloaf.
