Pepper Steak


Serves 2

One large Strip Steak, sliced
1/2 a green pepper, sliced
1/2 small onion, sliced

Marinate for  a couple hours in 1 tbsp oil, salt, pepper, garlic powder, 1/2 tbsp Worcestershire sauce, and a pinch of basil.

In a medium saucepan, melt 1 tbsp low calorie butter.

Saute steak, peppers, and onions until steak is cooked as desired.

Move steak to one side of pan and tilt so juices are on the other side.

Mix 1/4 c water with 1-2 tbsp corn starch. Add to juices. Cook and stir until thickened.

Mustard Chicken


Serves 4

2 Large chicken breasts, butterflied
     or 4 chicken thighs

1/2 c Dijon mustard
1/4 c sugar free maple syrup
1 tbsp vinegar
Fresh rosemary, chopped

Bake at 450 for 40 min.  Baste the tops of chicken with more sauce half way through.  Sprinkle with fresh rosemary when finished.


Beans:

Lay a single layer of fresh green beans on a cookie sheet. Top with 1/4 c onion, chopped. Sprinkle with salt, pepper, garlic powder, and oil.

Bake at 450 while chicken finishes for 15 mins.

Pasta:

Whole wheat pasta topped with Alfredo.

 

Broccoli Salad


Serves 4

4 c broccoli, chopped into bite size pieces
2 c carrots, chopped
1/2 c fat free shredded cheese
4 slices Turkey Bacon, cooked and crumbled

Dressing:
1 c fat free mayo
1/2 c apple cider vinegar
1/4 c Splenda

150 calories per serving

Feel free to add peas or cauliflower! Yum!

Low Calorie Creamsicle Cake





1 yellow cake mix
1 can of diet orange soda

Mix together and prepare according to package

Let cake cool for 10 mins.
Poke with a fork, making multiple holes

Prepare 1 small box sugar free orange jello according to package
Pour over cake.

Let chill for a few hours.

Icing:
1/2 container fat free cool whip
6oz fat free cream cheese
1 box fat free sugar free cheesecake flavored pudding mix

Mix all in a stand mixer for about 15 mins.

Keep cake refrigerated.

about 200 calories for 1/12th of the cake

Goodbye Stuffing Balls, Hello Stuffing Muffins!


Easy, quick, low calorie, portion controlled stuffing muffins!

1/4 cup finely chopped onions
1/2 cup chopped celery
1/3 cup low calorie butter

Saute until tender.

4 cups 35 calorie bread, cut into cubes
1/8 teaspoon pepper
1/2 teaspoon salt
1/4 to 1/2 teaspoon ground sage
1/4 to 1/2 teaspoon poultry seasoning
Light turkey or chicken broth

Combine onion mixture with bread, pepper, salt, sage and poultry seasoning in a large mixing bowl. Stir in broth until well moistened. (around 1 1/2 cans or so)

Scoop into greased muffin pan. Bake at 350 for 20-30 mins until browned.

This will make enough for an 8-10 lb turkey if you would rather stuff your bird or can be baked in a shallow casserole dish.

Easter Dinner

Dale and I are going to both my family and his family's homes to spend Easter. I am making lower calorie stuffing, broccoli salad, and two desserts (not sure what yet.) I will take photos and post the recipes ASAP.  Happy Easter, all!!

Dinner


1 Hebrew National Fat Free Hot Dog (40 calories)
I actually ate 2.

Parmesan Roasted Asparagus (30 calories for 1/2 c)
Parkay Spray Butter
Salt & Pepper
Parmesan Cheese

Bake at 350 for 10 mins

Potato Wedges

We also had a small side salad. Yum!
