Pepper Steak
Serves 2
One large Strip Steak, sliced
1/2 a green pepper, sliced
1/2 small onion, sliced
Marinate for a couple hours in 1 tbsp oil, salt, pepper, garlic powder, 1/2 tbsp Worcestershire sauce, and a pinch of basil.
In a medium saucepan, melt 1 tbsp low calorie butter.
Saute steak, peppers, and onions until steak is cooked as desired.
Move steak to one side of pan and tilt so juices are on the other side.
Mix 1/4 c water with 1-2 tbsp corn starch. Add to juices. Cook and stir until thickened.

Mustard Chicken
Serves 4
2 Large chicken breasts, butterflied
or 4 chicken thighs
1/2 c Dijon mustard
1/4 c sugar free maple syrup
1 tbsp vinegar
Fresh rosemary, chopped
Bake at 450 for 40 min. Baste the tops of chicken with more sauce half way through. Sprinkle with fresh rosemary when finished.
Beans:
Lay a single layer of fresh green beans on a cookie sheet. Top with 1/4 c onion, chopped. Sprinkle with salt, pepper, garlic powder, and oil.
Bake at 450 while chicken finishes for 15 mins.
Pasta:
Whole wheat pasta topped with Alfredo.
Broccoli Salad
Serves 4
4 c broccoli, chopped into bite size pieces
2 c carrots, chopped
1/2 c fat free shredded cheese
4 slices Turkey Bacon, cooked and crumbled
Dressing:
1 c fat free mayo
1/2 c apple cider vinegar
1/4 c Splenda
150 calories per serving
Feel free to add peas or cauliflower! Yum!

Low Calorie Creamsicle Cake
1 yellow cake mix
1 can of diet orange soda
Mix together and prepare according to package
Let cake cool for 10 mins.
Poke with a fork, making multiple holes
Prepare 1 small box sugar free orange jello according to package
Pour over cake.
Let chill for a few hours.
Icing:
1/2 container fat free cool whip
6oz fat free cream cheese
1 box fat free sugar free cheesecake flavored pudding mix
Mix all in a stand mixer for about 15 mins.
Keep cake refrigerated.
about 200 calories for 1/12th of the cake

Goodbye Stuffing Balls, Hello Stuffing Muffins!
Easy, quick, low calorie, portion controlled stuffing muffins!
1/4 cup finely chopped onions
1/2 cup chopped celery
1/3 cup low calorie butter
Saute until tender.
4 cups 35 calorie bread, cut into cubes
1/8 teaspoon pepper
1/2 teaspoon salt
1/4 to 1/2 teaspoon ground sage
1/4 to 1/2 teaspoon poultry seasoning
Light turkey or chicken broth
Combine onion mixture with bread, pepper, salt, sage and poultry seasoning in a large mixing bowl. Stir in broth until well moistened. (around 1 1/2 cans or so)
Scoop into greased muffin pan. Bake at 350 for 20-30 mins until browned.
This will make enough for an 8-10 lb turkey if you would rather stuff your bird or can be baked in a shallow casserole dish.
Easter Dinner
Dale and I are going to both my family and his family's homes to spend Easter. I am making lower calorie stuffing, broccoli salad, and two desserts (not sure what yet.) I will take photos and post the recipes ASAP. Happy Easter, all!!

From My Pantry-Slim Fast
I usually drink a Slim Fast shake every morning for breakfast during the week. They are quick and convenient, and only 180 calories per shake. I don't like strawberry or vanilla, only chocolate.
From My Pantry-Arctic Zero Ice Cream
This ice cream is really yummy!!! Oh, and it is 150 calories for the ENTIRE pint. Oh, and it is good for you! It can be found in the natural food sections of most Giant stores.
Fish Tacos
I had my grandparents over for lunch on Monday. I decorated my table for spring! I made fish tacos, recipe found below, but forgot to take a picture of them.
Serves 4
4 whole wheat tortillas
2 pieces of salmon, or other fish
1 tbsp cilantro
the zest of one lime
Sprinkle the salmon with the cilantro and lime.
Bake at 350 for 15-20 mins depending on the thickness of your fillet
Break it up into pieces.
Salsa:
2 tomatoes
1/4 c chopped onion
1/4 c chopped mango
1 tbsp balsamic vinegar
1/2 tsp honey
1/2 tsp lemon juice
1/2 tsp cilantro
Mix ahead and let chill while preparing the salmon
Top tortillas with fish and salsa. Enjoy!

around 150-200 calories per serving

From My Pantry-Mustard
Mustard is a great sandwich condiment. It has low calories and is better for you than mayo. These are the kinds we prefer.
Pizza Pizza
Serves 4
1 thin and crispy crust
1/2 c low calorie tomato sauce
1 c fat free mozzarella
Chopped veggies and meat ( I used mushrooms, tomatoes, onions, banana peppers, and Italian sausage.)
around 300 calories for a serving

Pizza Bread
Serves 1
1 slice 35 calorie bread
1 tsp tomato sauce
1 tbsp diced onion
1/8 c fat free mozzarella cheese
Sprinkle of garlic powder
Sprinkle of basil
2 Turkey pepperonis (optional)
Bake at 350 for 10 mins
about 75 calories
Honey BBQ Chicken Rolls
Serves 4 (2 rolls each)
2 c cooked shredded chicken skinless boneless breast
1 c chopped baby spinach
1/4 c chopped onion
1/4 c chopped mushrooms
1/2 c fat free shredded mozzarella cheese
1/4-1/2 c honey bbq sauce (you can buy it or make it)
Mix all ingredients well.
Evenly divide into 8 egg roll wrappers.
Wrap, sealing with egg white.
Bake with seam side down at 350 for 20-30 mins.
Rub rolls with butter to keep soft when you remove them from the oven.
about 320 calories per serving
Homemade BBQ Sauce
1/2 c ketchup
1 tbsp mustard
2 tbsp apple cider vinegar
1 tbsp honey
Mix well.
Baked Onion Rings
Serves 4
One large onion, sliced.
1 egg white
4 slices of 35 calorie bread, crumbled in a food processor.
Dip onion slices into egg white.
Coat with bread crumbs.
Place on cookie sheet and bake at 350 for about 20 mins.
Sauce:
4 tbsp Horseradish Sauce
4 tbsp low fat Thousand Island Dressing
Mix well.
about 80 calories for the onion rings
60 calories for 1/4 of the sauce
Total: 140 calories
Gnocchi with Creamy Tomato Sauce
Serves 2
2 1/2 c gnocchi, prepared according to package directions
Sauce:
1/4 c chopped onions
1/4 c chopped mushrooms
1/4 c chopped tomatoes
1 tbsp low fat butter
Saute until tender.
Add:
2 tbsp low fat ricotta cheese
2 tbsp low fat cottage cheese
1/2 c tomato sauce
Stir over low heat until cheese is melted.
Put sauce over gnocchi. Top with fat free mozzarella cheese.
about 230 calories per serving
From My Pantry-Horseradish Sauce
My husband loves horseradish spread for on sandwiches. I found this 15 calorie per tbsp sauce. I use it in recipes, and he puts it on sandwiches. It is pretty good and quicker than making our own all the time!
Fake Ice Cream Sandwiches
1 low fat honey graham cracker sheet
2 tbsp fat free cool whip
Spread cool whip on cracker.
Freeze.
To add some extra flavor add:
Sliced strawberries
Sliced banana
Mini chocolate chips
